Yummy Guacamole

  • 1 Avocado
  • 2 T. of your favorite salsa

Cut avocado in half and remove seed. Scoop the insides into a bowl and add the salsa. Simply mash them together with a fork until creamy. Use it as a dip for your favorite chips, dab it over beans and rice, or spread it on a burrito!

 

Delectable Double-Chocolate Brownies
  • 1 C. canola oil
  • 1 C. maple syrup
  • ½ C. soy milk
  • 1 T. vanilla extract
  • 2 C. unbleached white flour
  • 1 C. bakers cocoa
    
  • ¾ C. sugar
  • ½ C. sucanat (use sugar as substitute)
  • 2 tsp. baking powder
  • 1 ½ tsp salt
  • 1 C. walnuts (optional)
  • 1 C. vegan chocolate chips

Preheat oven to 350 degrees. Grease or line a 9 x 13 pan.

Combine the dry ingredients (flour, cocoa, sugar, sucanant, baking powder, salt) in a large mixing bowl. Combine wet ingredients (oil, soy milk, vanilla) in a medium bowl. Pour wet ingredients into the dry ingredients and mix by hand or with mixer on medium speed for 1-2 mins or until ingredients are thoroughly mixed. Add walnuts and/or chocolate chips and fold into batter. Pour batter into greased pan and spread evenly. Bake brownies for 30-35 minutes or until a toothpick comes out clean. The edges should be slightly crispy and the middle firm.

Peanutbutter Chocolate No-Milkshake

  • 1/4 cup Nondairy coffee creamer (found in your local grocer's dairy case)
  • 1 Tbs. Unsweetened Cocoa Powder
  • 1 Tbs. Carob Powder
  • 4 Tbs. Sugar
  • 2 Tbs. Creamy Peanutbutter
  • 1/2 Ripe banana
  • 1 1/4 Cups ice cubes

Add all ingredients except ice to a blender in the same order as listed. Blend for approximately 30 seconds, until smooth. Then add ice and blend for approximately 60 seconds, until there are no ice chunks. Makes approximately 16 oz of joy.
